Summer Entertaining Recipes Using #Silkology

Summer is the perfect time of year to entertain on the deck, patio or poolside, sipping something cool. In fact, my first question when guests arrive is ususally “Can I get you a beverage?” The typical choices are offered…beer, wine, soda, lemonade/iced tea (if made) or water. But, what if there were more options for my friends? Luckily, I found the perfect place where you can find delicious recipes- and you know how much I love to test out new recipes- all made from Silk Soy, Almond or Coconut Milk!

The creative minds of Silk have developed a new Silkology Facebook Page designed to share a whole new line of recipes for cocktails or “mock-tails”. The latter grabbed my attention due to having teens in the house and friends who do not drink alcohol.

So, as I searched through the recipes made by “Silkologist” Bryan Dayton, award-winning mixologist, I found the perfect one to remind me of our recent beach vacation…the Pina Colada! In less than 5 minutes, I was sitting on the deck with a glass full of goodness soaking in a beautiful sunset!

Pina Colada Recipe:

  • 1 cup Silk Pure Coconut Original or Vanilla coconutmilk (I used Original)
  • 1 banana
  • 1/2 cup pineapple chunks
  • 1/4 tsp coconut extract
  • 1/2 cup ice

*Blend all ingredients until smooth. Garnish with pineapple. Serves 2.

I was so pleasantly surprised how delicious this was! We usually have the chocolate Silk milk in the fridge..I never would have tried coconut had I not seen it on the Facebook page, but I’m so glad I did! My only recommendation for this recipe : try to use fresh pineapple (or 3/4 cup canned chunks) to really bring out the island flavor.

I can’t wait to try out a few more of Bryan’s concoctions and serve them up at the next deck gathering or the neighborhood Bunco night! Now that I think about it, any of the recipes could be made into a smoothie! Perfect for breakfast or post-workout recovery!

    I love the coconut milk!! I’ve been drinking the almond coconut milk (45 cals) in my Cinch shakes and it’s great!
    I’ll have to try this one though…. looks just about perfect for any time of the day!

      I love the coconut milk too! So much so, that I’m pretty sure it will be a regular in my fridge! :)
      I’ve made this as a smoothie for lunch too..really good! (Fresh pineapple is the key)
