Simple & Easy Broccolini- Mom Got Food

Ever have a craving that you just couldn't shake? Ever make an entire meal out of one vegetable? What if I told you I had a recipe to satisfy both?

Last week I was shopping in a local store that has amazing produce…both in quality and freshness. It probably doesn't hurt that how it is displayed is also a plus. Anyway, as I worked my way past the lettuce, spinach and root vegetables, what did I find nestled next to the gorgeous green caps of broccoli florets?

Broccolini! I've never made this before and for some reason it called out to me…well, more like SCREAMED MY NAME, so I plucked 2 bunches and placed them in my cart. As they look like a cross of asparagus and mini-broccoli, I had visions of garlic and lemon dancing on my taste buds.

As soon as I got home, I fired up the stove, sauteed the green goodness and in a matter of minutes, I was enjoying a perfect lunch. My mouth is watering just thinking about the memory! Get your frying pan ready because I'm going to share a recipe with you that is so good,

even George Bush would eat it!

The Recipe:

Simple & Easy Broccolini

Ingredients:

1 bunch Broccolini, thicker stems trimmed off.

1/2 lemon

1 tsp Kosher salt

1 clove garlic, minced

1-2 Tbsp olive oil

Instructions:

Wash broccolini well. Trim thick stems from bottom, then slice larger bunches in half. Set aside.  In frying pan over medium-high heat, add olive oil. 1. Mince 1 clove garlic and add to pan. 2. Stirring constantly, Cook garlic until just brown, about 1 minute. 3. Add broccolini and sautee for 2-3 minutes, or just until vibrant green and a slight bit soft or wilted. 4. Add salt, stir and plate, squeezing fresh lemon juice just before serving.

Absolutely delicious!

I buy broccolini all the time! It's one of my favorites... cooked exactly the same way too!
