Pear Pistachio Pizza Appetizer

Fall is the perfect time of year to welcome the cooler temperatures and enjoy cozy evenings. There are nights that my husband and I just do not feel like cooking and instead, have a dinner made up of appetizers. Simple finger foods with a glass of wine or a hearty beer and we are completely happy.

One of our favorite “snacks” is perfect for noshing during a football game, watching a movie or to serve while entertaining friends. In fact, I have even made this for lunch!

It is amazing that something so easy and simple to make can taste so incredible!

The Recipe:

1 small clove garlic, minced

2 Tbsp Olive oil

1 Bartlett pear, sliced thin (as thin as you can make it)

1 Tbsp Shelled pistachio nuts, chopped

1 Tbsp crumbled gorgonzola cheese

1 whole pita bread round

Preheat oven to 350 degrees. Meanwhile, in ramekin or small bowl combine olive oil and minced garlic. Let stand 10 minutes to infuse. place pita round on ungreased cookie sheet. Brush top of pita with garlic oil (ok to keep little bits of garlic!) Top with sliced pears in fan (or tart) fashion. Add crumbled gorgonzola cheese. Top with chopped pistachio nuts. Bake in oven for 10 minutes or until cheese is just melted. Slice into wedges and serve. Recipe makes 1 pita. Adjust ingredients accordingly to make multiple pizzas.

This really is heavenly. I like to enjoy with a great IPA brew, Sauvingon Blanc or Chardonnay.

Thanks Kir! Yes, we do this a lot...we even make fancy cheese trays or anti-pasta dish...so easy and yummy! Tapas all around. :)
