Welcome back for more recipes from Kelly's Kitchen! Last week kicked off our month of Saturday recipes to share for the upcoming holiday (or any time). I hope you tried the Pumpkin Drop Cookies (they are so good!) and the Pumpkin Roll recipe too.

Here in the Northeast, when Fall arrives, it is a sign to head to a local orchard to do one of our favorite things…apple picking! This year we ventured out to a new farm and enjoyed the ride through roads lined with trees showing off their colors of yellow, orange and red. The apples were ready for the picking!

Filling up our 1/2 bushel basket to the brim always seems like the greatest thing, but once we get home, I am  saying “What am I going to do with ALL of these apples??

Well, a few years ago I was given a tip which I will pass on to you too. But first the recipes for today:

Apple Pie  Recipe

Apple pie is one of our favorite all-time pies in this house, with pumpkin coming in a very close second. Our oldest nephew was born on 4th of July and his favorite thing to eat is apple pie. By the age of 5, he requested birthday pie rather than cake. He is my barometer of a successful apple pie. This recipe gets top honors!

Pinch crust to seal, make 4 cuts on top to vent & sprinkle with cinnamon.

This recipe could not be any easier….a quick prep and in 30 minutes you can have a simple yet delicious dessert.

Apple Crisp Recipe

Fall apples, cinnamon, and oat topping make an outstanding baked crisp perfect for dessert!

Cook Time 30 minutes
Total Time 30 minutes

Ingredients

  • 6 Cups slices apples, about 6 medium apples **I also use a mixture of apple types for this recipe. Macs and Cortlands are my favorite baking apples.
  • 1/2 cup flour
  • 3/4 cup brown sugar, firmly packed
  • 1/2 cup oats
  • 3/4 tsp cinnamon
  • 3/4 tsp nutmeg
  • 1/3 cup butter, chilled and sliced

Instructions

  1. Preheat oven to 375 degrees.
  2. Butter bottom and just up the sides of 9×9 baking dish. (If using a dark or non-stick pan, decrease oven temp to 325)
  3. Peel, core and slice apples thin.
  4. Place in even layer in buttered pan.
  5. Mix together flour, sugar, oats, cinnamon and nutmeg.
  6. Place in slices of butter and with a pastry blender or two knives, cut in butter to mixture until crumbly.
  7. Pour mixture over apples, making sure all apples are covered.
  8. Bake for 30 minutes.
  9. This is super delicious served hot with vanilla ice cream.

Everyone likes the gooey warm apple crisp!

These will both be on my Thanksgiving Table this year along with pumpkin pie and pumpkin cookies. I might even make a pumpkin roll!

Baking Apple Desserts? Here's Some Kitchen Tips For You

Make sure you are using an apple variety that bakes well. Red Delicious are great to snack on but make horrible pie apples (mushy!).

If you have a slicer/corer apparatus, similar to the one pictured, it will save a lot of time. You can find this at any grocery store, Target, Walmart or Kitchen Supply. I had one and it broke…so this year I had to go old-school and cut by hand!

Bake pies on foil-lined cookie sheets. This will help catch any juices that bubble over and save from cleaning the oven!

If crust edges are always coming out too dark, cover with strips of foil while baking or invest in a pie crust shield.

Yes! Make a bunch of filling and freeze it!

THE BEST TIP for you to handle a lot of apples and/or prepare for the holidays: [drum roll please….]

Freeze your pie filling!

My neighbor shared this tip with me a few years ago and I have done it ever since. Make the pie filling as above and instead of putting it in a crust, put it in a freezer bag. When you need a pie, take out, defrost, pour into crust and you have yourself a pie!

Both the pie and crisp did not last long at all. I have two pie fillings in the freezer ready for Thanksgiving. :)
