Celebrate February with RedPack Risotto & Giveaway


February is the month of love and the color red. What fruit contains both of these qualities?

The tomato of course!

And there is nothing an Italian kitchen loves more than a nice big, red, tomato! It is a staple in almost every recipe along with the sidekicks of garlic and onion. In fact, every Sunday in our house you will find (or smell!) a pot of fresh sauce simmering on the stove waiting to top pasta for the family meal.

If you think about it, tomatoes are in most of our favorite foods; pizza, salsa, salads, appetizers to main meals and this red ball of food shares the love too; packed with Lycopene (Lie-co-peen) a heart-friendly antioxidant and vitamins A & C. Perfect for the month of “Love”, wouldn’t you say?

Looking for an easy Main Dish with tomatoes? I have the PERFECT recipe for you! I was a bit skeptical at first because this is made in the microwave, but the end result is absolutely fantastic! I was totally surprised by the creamy taste and ate every spoonful followed with “Mmmmm.” I cannot wait for leftovers for lunch!

Make this and I guarantee you will love it!

Tomato Risotto*

4 tbsp butter

1 clove garlic, minced

1 onion, chopped

1 (28 0z.) can REDPACK Diced tomatoes Basil, Garlic & Oregano

1 – 1/2 cups uncooked Arborio or other short-grain white rice (I used Arborio)

1 (15 oz.) can REDPACK Tomato Sauce

1/2 cup Parmesan Cheese, grated (use a quality cheese found in cheese department. It will taste better! )

In a 4QT microwave-safe dish (I used a large Pampered Chef Batter Bowl), combine butter, garlic and onion. Cook on HIGH for 3 minutes. Place the REDPACK diced tomatoes Basil, Garlic & Oregano in the dish. Microwave until hot but not boiling (about 2 minutes). Stir in the rice; cover and cook on HIGH for 6 minutes. Stir in REDPACK Tomato Sauce and cook on HIGH for additional 10 to 12 minutes or until liquid is absorbed. Stir in cheese and serve. *This recipe is printed with the permission of RedPack Tomatoes.

I’m telling you, this was AWESOME!! Simple, elegant and delicious!



Want to know how I got that fabulous recipe?? Well, the fine folks over at RedPack Tomatoes asked if I would like to try their product. As I cook with tomatoes ALL THE TIME, I said sure. What was also great? No strings. I could try their product and if I liked it, great and if not, that was okay too.

The FedEx man came to the door and delivered a pretty big box….and what was inside? A HUGE REDPACK TOMATO CAN!


Not that can….THIS ONE!  Filled with cooking things like a pasta spoon, spatula, pizza cutter, can opener, recipe cards and of course, tomatoes!


I cannot tell you how many neighbors have commented on the can sitting in my kitchen! “Oh, how neat is that?!”

    This sounds awesome. I love me some risotto! My fave tomato dish is probably roasted tomatoes stuffed with veggies and topped with cheese. YUM!

    I love a simple recipe. Rinse cherry tomatoes and spread on a baking sheet. Drizle with olive oil and sea salt – then roast at 375 for about 20 minutes. So yummy.

    I LOVE risotto so, so much! I really could eat it all the time.

    What would this taste like with a bit of wine in it?

    The Redpack tomatoes look a lot like the Red Gold tomatoes that we have here.

    I could eat risotto every night except for the fact that you have to stand over the stove stirring it constantly, I am going to give this quick microwave recipe a try, maybe add shrimp.
