Did you know that one of the top resolutions folks make for the New Year is to eat better? I'm no exception. I decided that this year, I am making sure my diet is better. Our family doesn't really eat bad on a normal day- we don't drink soda that often, we always have veggies and fresh fruit around..but I feel like the diet needs a little umph.

So I wanted to share a simple recipe with you that is super easy, delicious and will help keep you on track of eating healthy.

For the past few days I have been hooked on oatmeal for breakfast. It is the perfect way to start a cold day I tell you. It's warm and fills you up. I've always been a fan of oatmeal…in fact during my competitive days in speedskating, it was my go-to breakfast. It is also a great post-workout meal or meal anytime for that matter.

This is the recipe that I have been making:

3 Berry Oatmeal

1/2 cup Quick Oats

1 cup water

1 tablespoon honey ( I found a clover honey from a local apple farm-delish!)

Blackberries, Raspberries, Blueberries

Combine oats and water in bowl and microwave for 1 -2 minutes. Depending on the power of your microwave, you will have to adjust. I like mine on the thick side, so I cook for 1 – 1/2 minutes. Measure berries with your palm. Drizzle with honey. Stir gently until mixed. Enjoy!

This can be customized with any add-in that you enjoy; chopped nuts or any fruit you like- the trick is to keep it limited to the size of your palm.  If you don't like honey and want a sweetener, opt for 1 tablespoon of brown sugar. It is a better alternative to regular granulated.

I think I am going to try strawberries and bananas next!

If you are almost done with the smoothie, juice or protein breakfast, this oatmeal will be a great change or addition to try.

I have had this for breakfast for a week! So good!! :) Today I switched it up with a fruit juice smoothie, but I will be back to oatmeal tomorrow!

I have a superb baked oatmeal recipe that you make in an 8x8 dish.It can be made with Splenda brown sugar, if preferred, and I add flax meal,and dried fruits of all kinds depending on what I feel like at the time.A dollop of vanilla yogurt is delish but you can cut a aquare,heat it in the morning and eat it in you hand as you go out the door, without the yogurt,of course:):).I served it at a brunch and my friend who dislikes oatmeal had 2 helpings and took the recipe home.

This is one of those things that I've always wished I like and have tried several times over the years, but I just can't do it. My texture issues are too strong and I gag every time I try to eat it.

That is a bummer! It's the one thing I found I could eat before working out that did not upset my stomach.
